I'd do 500 all at once and then if I felt like it I'd do a few more laps and take rest breaks in between. I have worked up to a "long" swim workout of 200 warm up, 800 nice and easy, 200 cool down. The 800 is challenging for me all at once, but I can crank it out. This approach works your cardio more and your legs less, best for long rides and hills.
